CARROT & CORIANDER SOUP

     

This tasty soup can be served hot or cold. Home-baked or whole-wheat bread is a perfect companion. Serve as a starter (4 servings) or main meal (2 servings).

Ingredients:

1 tablespoon (15 ml) olive oil

1 onion, chopped

450 – 500g carrots, peeled and sliced in rings

1 teaspoon (5 ml) CORIANDER (GROUND)

½ teaspoon (2.5 ml) salt and BLACK PEPPER (GROUND)

1 l boiling water

4 vegetable stock cubes

Method:

Tips:

  1. Garnish the soup with fresh chopped coriander leaves – if available.
  2. For creamier soup, stir in ½ cup of fresh cream.
  3. You may substitute vegetable stock cubes and water by using 1l ready-made vegetable stock.
