CARROT & CORIANDER SOUP
This tasty soup can be served hot or cold. Home-baked or whole-wheat bread is a perfect companion. Serve as a starter (4 servings) or main meal (2 servings).
Ingredients:
1 tablespoon (15 ml) olive oil
CORIANDER (GROUND)1 onion, chopped
450 500g carrots, peeled and sliced in rings
1 teaspoon (5 ml)
½ teaspoon (2.5 ml) salt and
BLACK PEPPER (GROUND)1 l boiling water
4 vegetable stock cubes
