POTATOES IN WINE AND CORIANDER
A potato dish bursting with flavour! It can be served with just about
anything, but it compliments braaivleis or roasts best. 6 8 servings
Ingredients:
1kg baby potatoes, rinsed
1 cup (250 ml) olive oil
½ cup (125 ml) dry red wine
salt to taste
½ teaspoon (2.5 ml)
BLACK PEPPER COARSE
1 tablespoon (15 ml)
CORIANDER (WHOLE)
Method:
- Heat the oil in a large pan with a lid. Dry potatoes on kitchen towel.
- Hit each potato sharply with a mallet to crack. Then add potatoes to oil, and fry for 5
10 minutes on high heat.
- Reduce heat. Add red wine, salt and pepper. Cover and simmer for 15 to 20 minutes until
potatoes are tender.
- Crush the coriander lightly (in a cloth, using a mallet or rolling pin), and sprinkle
over potatoes.
- Mix well and simmer, covered, another 5 10 minutes.
- Drain and serve warm.
Tips:
- You may substitute baby potatoes with sliced large potatoes but do not peel them.
