BEEF POTJIE with BEER
Hand this recipe to dad! Nothing beats traditional South African
Potjiekos on a laid-back Saturday afternoon. Serves 6 8.
Ingredients:
1 kg beef cubes
2 tablespoons (30 ml) cake flour
2 teaspoons (10 ml)
POTJIEKOS
1 teaspoon (5 ml)
PAPRIKA
1 tablespoon (15 ml) butter/margarine
1/4 cup (60 ml) vegetable oil
2 onions, sliced
1 tablespoon (15 ml) sugar
1 tablespoon (15 ml)
GARLIC CRUMBLE
1 ˝ bottles beer
125 ml Beef stock
1 packet tomato/ hearty beef soup powder
2 tablespoons (30 ml)
POTJIEKOS
1 tablespoon (15 ml) vinegar
2 teaspoons (10 ml) corn flour
Method:
- Combine the flour, potjiekos and paprika in a large freezer bag. Add meat and shake well
until covered.
- Heat the butter/margarine and half the oil in a "swart potjie" (cast iron pot)
and quickly brown the meat. Keep aside.
- Add the onions, sugar and the rest of the oil to the pot. Sauté onions until tender.
- Return the meat to the pot, and add the beer, stock, soup powder and remaining potjiekos
spice. Stir well, cover and simmer on low heat (medium coals) for 1˝ hour, until meat is
tender.
- Combine vinegar and corn flour, add to pot and stir. Simmer another 5 minutes until
sauce has thickened.
- Serve hot with rice.
Tips:
- Add vegetables such as carrots and green beans with the onions.
- Add water for a saucier potjie.
